    Prepare jalapeños

    Wash jalapeños. Wearing gloves if preferred, slice each pepper lengthwise and remove seeds and membranes with a small spoon or paring knife. For milder heat, remove all white ribs; for some heat, leave a bit. Pat peppers dry with paper towels and set cut-side up on a tray.

    Make filling

    In a medium bowl, combine softened cream cheese, shredded cheddar, shredded Monterey Jack, garlic powder, onion powder, smoked paprika, chopped cilantro (if using), salt and black pepper. Mix with a spatula until uniform, scraping down sides. Taste and adjust seasoning.

    Fill peppers

    Using a small spoon or piping bag, fill each jalapeño half with the cheese mixture, mounding slightly but leaving a small gap at the top so coating adheres. Place filled peppers on a parchment-lined tray and chill in the refrigerator for 15–20 minutes to firm up the filling (this helps coating stick).

Coating & Frying (or Baking)

    Set up dredging station

    Place flour in a shallow bowl and season lightly. In a second bowl, whisk together the beaten eggs and milk. In a third bowl, combine Panko, grated Parmesan, Italian seasoning, salt and pepper. If you prefer a finer crust, pulse Panko once in a food processor for 3–4 quick pulses.

    Coat the poppers

    Working in batches, lightly dust each chilled, filled jalapeño with flour, shaking off excess. Dip into the egg mixture, letting excess drip off, then press firmly into the Panko mixture to fully coat. For a thicker crust, repeat the egg and Panko step for a double-coat. Place coated poppers on a wire rack while you finish the rest.

    Fry method (crispiest)

    Heat 1½–2 cups vegetable oil in a deep skillet or saucepan to 350°F (175°C). Fry poppers in batches, 2–3 minutes per side, turning once, until golden brown and internal temperature reaches ~165°F and cheese is melted. Use a slotted spoon to transfer to a paper towel–lined tray to drain. Keep warm in a 200°F oven if needed.

    Bake method (healthier)

    Preheat oven to 425°F (220°C). Lightly spray a baking sheet with nonstick spray. Place coated poppers on the sheet and spray the tops lightly with oil. Bake for 15–20 minutes, turning once halfway, until golden and crisp and cheese is melted. For extra browning, broil 1–2 minutes at the end—watch closely.

Finishing & Serving

    Transfer poppers to a serving platter. Garnish with chopped cilantro if desired and serve immediately with lime wedges and ranch or cilantro-lime crema for dipping. Poppers are best served hot; if holding, keep in a 200°F oven for up to 20 minutes but note crust will soften over time.

    Storage: Refrigerate leftover poppers in an airtight container for up to 2 days. Recrisp in a 375°F oven for 8–10 minutes or in an air fryer at 350°F for 5–7 minutes.
