Caesar dressing

    Prepare anchovies and garlic

    If using anchovy fillets, place them on a cutting board and finely mince with the garlic until they form a paste. If using anchovy paste, combine paste with minced garlic.

    Whisk base

    In a medium bowl, whisk together the mayonnaise and Greek yogurt until smooth.

    Combine flavorings

    Whisk in the lemon juice, Dijon mustard, Worcestershire sauce, the anchovy-garlic paste, and the salt until fully incorporated.

    Emulsify

    Slowly drizzle in the olive oil while whisking constantly to emulsify the dressing into a creamy texture. Taste and adjust seasoning: add up to 1/4 tsp more salt or another 1/2 tablespoon lemon juice if brighter acidity is desired.

    Chill

    Cover and refrigerate the dressing for at least 15 minutes (or up to 24 hours) to let flavors meld. Bring to cool room temperature before tossing if served immediately.

Salad

    Prepare lettuce

    Dry the washed romaine thoroughly using a salad spinner or clean kitchen towel. Tear hearts into roughly 1- to 2-inch pieces and place in a large salad bowl.

    Add cheese and croutons

    Reserve about 2 tablespoons of the grated Parmesan for garnish. Add the remaining Parmesan and croutons to the bowl with the lettuce.

    Dress the salad

    Add 3 to 4 tablespoons of the chilled (or room-temperature) dressing to the salad bowl. Toss gently but thoroughly with tongs or salad servers, coating leaves evenly. Taste and add more dressing, up to total of 1/2 cup, if desired.

    Plate and finish

    Divide the dressed salad among plates or serve family-style. Sprinkle the reserved Parmesan over the top and grind the freshly ground black pepper over each portion. Add lemon wedges at the side for optional extra brightness.

    Optional protein

    If using grilled chicken: slice 1 cooked, rested chicken breast and arrange on top of each portion before the final cheese and pepper. Serve immediately.
