Prep chicken

If breasts are very thick, butterfly or pound them to an even thickness about 3/4 inch (2 cm). Pat chicken dry with paper towels.

Make marinade

In a medium bowl, mince garlic or press through a press. Whisk together olive oil, lemon juice, minced garlic, soy sauce, Dijon mustard, honey, dried oregano, smoked paprika, salt, and black pepper until emulsified.

Marinate

Place chicken in a resealable plastic bag or shallow dish. Pour marinade over chicken, pressing out excess air and ensuring breasts are coated. Refrigerate for at least 30 minutes and up to 4 hours. Do not marinate longer than 6 hours to avoid texture changes from acid.

Preheat grill

Preheat gas or charcoal grill to medium-high, about 400°F (200°C). Clean and oil the grates to prevent sticking.

Grill chicken

Remove chicken from marinade, letting excess drip off. Place breasts on the hottest part of the grill. Grill with lid closed for 5–6 minutes without moving, then flip and grill 4–6 more minutes until an instant-read thermometer inserted into the thickest part reads 160–165°F (71–74°C). Times vary with thickness.

Rest

Transfer chicken to a clean plate and tent loosely with foil. Let rest 5 minutes — carryover will bring internal temp to target and juices will redistribute.

Finish & serve

While chicken rests, melt butter and brush over the breasts. Sprinkle chopped parsley and serve with lemon wedges for squeezing over the chicken.
