    Place the sliced okra in a shallow bowl and toss with the 3 tablespoons buttermilk and optional 1 teaspoon hot sauce until evenly coated. Let sit 5–10 minutes. This helps the breading adhere and adds flavor.

Breading

    In a wide shallow bowl or rimmed baking sheet, combine 1 cup cornmeal, 1 cup all-purpose flour, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon paprika, 1/2 teaspoon garlic powder, and 1/4 teaspoon cayenne pepper. Stir with a fork to evenly distribute spices.

    Working in batches, dredge the buttermilk-coated okra in the cornmeal mixture, tossing to coat thoroughly. Press the mixture onto the okra to create an even crust, shaking off excess. Set dredged okra on a wire rack while you heat the oil; this prevents sogginess.

    Pour about 2 cups (or enough) vegetable oil into a heavy skillet or Dutch oven to a depth of about 1/2 inch. Heat over medium-high heat until oil reaches 350°F (175°C) or a small breadcrumb sizzles and browns within 30–40 seconds.

    Carefully add a single layer of breaded okra to the hot oil without crowding the pan (work in batches). Fry 2–3 minutes, stirring gently or turning occasionally, until golden brown and crisp. Smaller pieces may take less time; adjust accordingly.
