Chocolate Cake

    Prepare and preheat

    Preheat the oven to 350°F (175°C). Grease and line a 9-inch (23 cm) round cake pan (or two 8-inch pans for layered presentation) with parchment; lightly dust with flour or cocoa powder.

    Dry ingredients

    In a large bowl, sift or whisk together the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until evenly combined.

    Wet ingredients

    In a separate bowl, whisk the eggs, buttermilk, oil and vanilla until smooth.

    Combine and add hot water

    Make a well in the dry ingredients, add the wet mixture and stir until just combined. Gradually stir in the hot water — the batter will be thin; this yields a moist crumb. Scrape the bowl and give one last gentle stir.

    Bake

    Pour batter into the prepared pan(s) and bake 28–35 minutes (less for thinner layers) until a toothpick inserted into the center comes out with a few moist crumbs. Rotate the pan halfway through baking for even color.

    Cool

    Let the cake cool in the pan 10 minutes, then invert onto a wire rack to cool completely before assembly. If using two layers, level tops with a serrated knife once cool.

Dulce de Leche Filling

    If using store-bought dulce de leche, gently warm it in a microwave-safe bowl for 20–30 seconds and stir to loosen for spreadability. For homemade, ensure it's thick but spreadable. Reserve about 1 to 1 1/4 cups for filling and keep remainder for garnish if desired.

Dark Chocolate Sauce

    Warm cream

    Place the chopped dark chocolate in a heatproof bowl. Heat the heavy cream and corn syrup in a small saucepan over medium heat until it just begins to simmer and small bubbles form at the edge (do not boil).

    Emulsify

    Pour the hot cream over the chopped chocolate and let sit 1 minute to soften. Stir gently from the center with a spatula until smooth and glossy. Add butter and a pinch of salt, stir until incorporated. Keep warm or let cool to a slightly thickened but pourable temperature for plating.

Dark Chocolate Streusel

    Make streusel dough

    Preheat oven to 350°F (175°C) if not already in use. In a medium bowl stir together flour, sugar, cocoa powder and salt. Add cold cubed butter and rub with fingertips or use a pastry cutter until mixture forms coarse crumbs (pea-sized and smaller).

    Bake streusel

    Spread the streusel on a small baking sheet lined with parchment and bake 10–12 minutes until dry and slightly crisp, shaking the pan once to ensure even baking. Remove and cool completely — it will crisp further as it cools.

Tempered Chocolate Decoration

    Temper chocolate

    Chop the 10 oz of dark chocolate finely. Melt about two-thirds of the chocolate in a heatproof bowl over a double boiler (simmering water, bowl not touching water) until it reaches 115–120°F (46–49°C). Remove from heat and add the remaining chocolate, stirring to bring the temperature down to 88–90°F (31–32°C) for dark chocolate. If using a microwave method, heat in short bursts and stir frequently. Properly tempered chocolate will feel fluid and set with a glossy finish and snap.

    Form decorations

    Working quickly while tempered, pipe or spread thin ribbons, shards or freeform shapes on a silicone mat or acetate. Alternatively, coat textured molds. Let the chocolate set at room temperature until firm (tempered chocolate sets within 10–20 minutes).

    Apply gold brush

    Make a luster paint by mixing edible gold luster dust with the small amount of neutral alcohol or lemon extract until it becomes a smooth paint. Using a clean food brush, gently apply gold paint to selected faces of the tempered chocolate pieces. Allow to dry completely.

Finishing & Assembly

    Crumb coat (optional)

    If layering, spread a thin layer of softened butter (and a tablespoon powdered sugar if you want it slightly sweeter) over the top and sides of cooled cake layers to catch crumbs. Chill 10 minutes to set.

    Fill

    Place the bottom cake layer on a serving plate. Spread about 3/4 to 1 cup of dulce de leche evenly on the layer, leaving a 1/4-inch border to avoid overflow. If using two layers, place the second layer on top and press gently.

    Top and drizzle

    Spoon or pour the dark chocolate sauce over the top center of the cake and let it naturally drip toward the edges, smoothing slightly with an offset spatula if desired. Reserve some sauce for plating.

    Add streusel and decorations

    Scatter the cooled dark chocolate streusel over part of the cake surface for texture contrast. Arrange tempered chocolate shards that have been brushed with gold on top or leaning against the cake. Sprinkle a very light pinch of sea salt flakes over the streusel and sauce to enhance flavor, if desired.

    Serve

    Slice with a sharp knife (wipe between cuts for clean slices). Serve with extra chocolate sauce on the side and a spoonful of leftover dulce de leche if you reserved any. Store leftovers covered in the refrigerator for up to 3 days; bring to near room temperature before serving for best texture.
