Ceviche carretillero

    Prepare fish and marinade

    Place the cubed fish in a non-reactive bowl. Add strained fresh lime juice so fish is fully submerged. Cover and refrigerate 10–15 minutes, until edges turn opaque but center remains slightly translucent (carretillero style is slightly 'less cooked' than fully cured).

    Combine vegetables and season

    While fish marinates, toss the thinly sliced red onion with a pinch of salt and cold water for 5 minutes, then drain and pat dry to reduce bite. In a separate bowl combine diced tomato, chopped cilantro, chopped aji, sea salt and black pepper.

    Finish and serve

    Drain about half the lime juice from the fish (leave some for flavor). Gently fold in the tomato mixture and sliced onion. Adjust seasoning with salt and pepper to taste. Plate with boiled sweet potato slices and garnish with tostones or cancha. Serve immediately.

Ceviche de ají amarillo

    Marinate fish with aji amarillo

    Put cubed fish in a non-reactive bowl. Whisk the aji amarillo paste with lime juice and evaporated milk (or light cream) until smooth. Pour the mixture over the fish to coat fully. Refrigerate for 10–20 minutes until fish is opaque at the edges.

    Prepare aromatics

    While fish cures, rinse and drain the thinly sliced red onion as above. Chop cilantro and have corn or cancha ready.

    Assemble

    Remove fish from fridge and, if desired, drain a small portion of the marinade to avoid overpowering creaminess. Fold in the rinsed onion and chopped cilantro. Season with sea salt and black pepper to taste. Serve chilled with boiled sweet potato slices and corn or cancha on the side.

Ceviche clásico

    Cure the fish/seafood

    Place the seafood in a non-reactive bowl and pour the strained lime juice over it, making sure pieces are submerged. Cover and refrigerate for 15–20 minutes, until seafood turns opaque and firms (timing depends on piece size).

    Prep onion and chilies

    Rinse and drain the thinly sliced red onion to mellow flavor. Finely chop the aji limo or jalapeño. Chop cilantro.

    Mix and season

    Drain most of the lime juice, leaving enough to keep the ceviche moist. Add the onion, chopped chili and cilantro to the seafood. Season with sea salt and black pepper, toss gently to combine. Taste and adjust heat or salt.

    Serve

    Serve immediately with boiled sweet potato slices and tostones or tortilla chips. Ceviche is best eaten fresh; do not store for more than a few hours.
