Method
Crispy rice base

Prepare sushi rice ahead: while rice is warm, fold in rice vinegar, sugar and kosher salt until combined. Spread rice in a shallow pan to cool slightly (about 10 minutes).

Form rice cakes: wet your hands (or lightly oil) and portion the rice into 8 equal portions (about 1/3 cup each). Press each portion firmly into compact rectangular or round cakes about 2–3 inches across and 1/2 inch thick. Place on a tray.

Chill cakes: refrigerate formed rice cakes for 15–20 minutes to firm them so they hold shape when frying.

Heat oil: in a wide skillet, pour neutral oil until it reaches roughly 1/8–1/4 inch depth (or enough to shallow-fry). Heat over medium-high to about 350°F (175°C) or until a small rice scrap sizzles immediately.

Fry rice cakes: working in batches, add rice cakes to the hot oil gently. Fry 2–3 minutes per side, pressing lightly with a spatula, until surfaces are deep golden-brown and crisp. If cakes are thick, reduce heat to medium and cook until centers are warmed through and crust forms.

Drain and rest: transfer fried rice cakes to a paper-towel-lined rack. Keep warm in a single layer in a low oven (200°F / 95°C) while finishing other components.

Avocado mousse

Blend mousse: scoop avocado flesh into a small food processor or bowl. Add softened cream cheese, lime juice, sea salt and 1 tsp cold water. Purée until smooth and airy, adding up to another teaspoon of water if needed to reach a pipeable mousse consistency. Transfer to a piping bag or small squeeze container.
Spicy mayo

Make spicy mayo: in a small bowl combine mayonnaise, sriracha, toasted sesame oil and optional lime juice. Whisk until smooth and adjust heat to taste. Transfer to a squeeze bottle or small piping bag.
Assembly & garnish

Plate base: arrange warm crispy rice cakes on a serving platter (eight cakes yields eight bites).

Pipe avocado mousse: using the piping bag, pipe a small dollop (about 1 tsp) of avocado mousse onto the center of each crispy rice cake, smoothing slightly to create a shallow well for the tartare.

Top with tartare: lightly mound about 1 tablespoon of smoked salmon tartare on top of the avocado mousse on each cake. Do not overload — a compact portion keeps the bite balanced.

Finish with sauces: drizzle a small line or dots of spicy mayo across each piece. Then lightly drizzle eel sauce (about 1/4 tsp per piece) in a thin ribbon for sweet-savory contrast.

Garnish: sprinkle each piece with a pinch of tobiko and a few toasted sesame seeds. Add a sliver of sliced scallion and a microgreen if using.

Serve immediately: serve while crispy rice is still warm and crunchy. Provide napkins—these are delicate bites best eaten in one or two bites.
