Mussels and marinade

Clean and blanch mussels
Rinse mussels under cold running water, remove any beards and discard any with broken shells or that do not close when tapped. Place a large pot of water to a gentle boil with 1 tsp kosher salt. Add mussels, cover and steam 3–5 minutes until shells open. Immediately transfer the cooked mussels to an ice bath (cold water with ice cubes) to stop cooking. Once cooled, remove mussels from shells leaving the meat intact in one shell half or remove completely and reserve shells for plating. Reserve 120 ml of the cooking liquid, strain and chill.

Prepare quick lime marinade
Combine 120 ml fresh lime juice with the reserved chilled cooking liquid (or 120 ml seafood stock if cooking liquid is insufficient) and 60 ml cold water in a bowl. Taste and adjust acidity—marinade should be bright and slightly tangy. Place mussel meat into the bowl and refrigerate for 6–10 minutes—do not marinate longer than 15 minutes to avoid overcooking the mussels with the acid.

While mussels marinate, make the chalaquita: combine the finely diced red onion, diced tomato, minced aji limo (or serrano), chopped cilantro and parsley, 30 ml lime juice, 2 tbsp olive oil, 1 tsp sea salt and 1 tsp black pepper in a bowl. Mix gently and let sit 5–10 minutes so onion softens and flavors meld. Adjust seasoning if needed. Keep refrigerated until assembly.

Prepare the leche de tigre base: in a small bowl, mash the crushed garlic with 1 tsp fish sauce (or a pinch of salt) and the sliced ginger. Add 60 ml fresh lime juice and 60 ml cold water, then whisk into the chalaquita mixture or set aside to add at plating for a brighter, separate liquid. Taste and balance with more lime, water or fish sauce to achieve a vibrant, savory-citrus balance.
Assembly and garnishes

Drain mussels from the lime marinade, reserving about 60–80 ml of the leche de tigre-style liquid. Arrange mussels on a serving platter or individually in their shells. Spoon a small amount (about 1 tbsp) of chalaquita over each mussel or place a mound of chalaquita beside the mussel meat.

Spoon 1–2 tbsp of the leche de tigre liquid around or over the mussels (use the reserved lime-marinate and additional leche de tigre you prepared) so each bite has a bright citrus-savoury note but the chalaquita remains textured.

Scatter cancha and choclo kernels over and around the mussels for crunch and contrast. Garnish with cilantro leaves and microgreens. Serve immediately with lime wedges on the side.
