    Prepare the crab

    If using live crab: humanely kill and clean (or ask your fishmonger to do this). Rinse crab under cold water, remove gills and stomach pocket, and crack claws slightly with the back of a chef's knife so sauce can penetrate. If using frozen, thaw fully in refrigerator, rinse, and pat dry.

    Season

    Season the crab pieces evenly with kosher salt and freshly ground black pepper, rubbing into the shell and body cavities. Let rest 10 minutes.

    Pan-sear or roast

    Heat a large heavy skillet or cast-iron pan over medium-high heat. Add neutral oil and heat until shimmering. Add crab pieces, shell-side down first; cook 3–4 minutes until shells pick up color. Flip and cook an additional 2–3 minutes. Reduce heat to medium and continue to cook until crab is just cooked through (internal flesh opaque), 3–5 more minutes depending on size. Transfer cooked crab to a platter and reserve pan juices for the sauce step.

Cereal Chili Crisp Sauce (option A)

    Toast crumbs

    In a small dry pan over medium heat, toast rice bran or panko cereal crumbs, stirring frequently, until golden and fragrant, about 3–4 minutes. Remove and set aside.

    Build sauce

    In the same pan used to cook crab (wipe out excess oil but leave fond), add 4 tbs unsalted butter over medium heat. When butter foams, add minced garlic, grated ginger, and minced shallot. Sauté 1–2 minutes until fragrant and softened, taking care not to brown aggressively.

    Finish sauce

    Stir in chili crisp, fish sauce, lime juice, and light brown sugar. Cook 1 minute to marry flavors. Stir in toasted cereal crumbs and chopped cilantro. Taste and adjust seasoning — add a pinch more fish sauce for savory, lime for brightness, or chili crisp to increase heat.

    Coat crab

    Return the cooked crab to the pan and toss briefly (1–2 minutes) to coat shells and meat with the cereal chili crisp sauce, spooning sauce into cracked claws and cavities. Transfer to serving platter, sprinkle with extra toasted crumbs and sliced scallions, and serve with lime wedges.

Garlic Butter Sauce (option B)

    Make garlic butter

    In a clean skillet over medium-low heat, melt 6 tbs unsalted butter. Add minced garlic and minced shallot and gently cook 2–3 minutes until fragrant and softened but not browned.

    Finish sauce

    Stir in lemon juice and fish sauce (or soy), and cracked black pepper. Cook 30 seconds more. Remove from heat and fold in chopped parsley.

    Coat crab

    Return the cooked crab to the skillet with garlic butter and spoon sauce over the crab for 1–2 minutes to warm and coat (do not boil). Transfer to a serving dish, garnish with sliced scallions and extra parsley, and serve with lime wedges.

    Choose one sauce: Cereal Chili Crisp or Garlic Butter. Ensure crab is evenly coated and hot. Garnish with sliced scallions, extra toasted cereal crumbs if using cereal sauce, and lime wedges on the side. Serve immediately so the crab is hot and the sauces are glossy.

    Notes: For best results, cook crab just until opaque — overcooking makes meat dry. If serving family-style, present whole crab on a large platter with small bowls of additional chili crisp or melted garlic butter for dipping.
