Prepare the Pork
Trim any excess fat from the pork shoulder. Rub the paprika, brown sugar, salt, black pepper, and cayenne pepper all over the meat.
Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add the chopped onion and minced garlic on top. Pour 1 cup of BBQ sauce over the pork. Cover and cook on low for 8-10 hours or until the pork is tender and easily shredded.
Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the remaining BBQ sauce. Let it cook for an additional 30 minutes on low.
Assemble the Sandwiches
To serve, scoop the pulled pork onto the buns. Top with coleslaw if desired. Serve warm.
