Roasted Tofu Wrap Recipe

Roasted tofu

    press and prep

    Drain the tofu, wrap in clean kitchen towels or paper towels, and press under a weighted pan for 15–20 minutes to remove excess water. After pressing, slice tofu into 8–12 rectangular slabs (about 1/2-inch thick).

    marinade

    Whisk together soy sauce, olive oil, maple syrup, smoked paprika, garlic powder, and black pepper in a shallow bowl. Toss tofu slabs gently to coat, then sprinkle cornstarch over tofu and lightly toss again to coat — this helps create a crisp exterior.

    roast

    Preheat oven to 425°F (220°C). Arrange tofu on a parchment-lined baking sheet in a single layer. Roast 20–25 minutes, flipping once at 12 minutes, until edges are golden and slightly crisp. Remove and keep warm.

Smoked carrot

    prepare carrots

    Preheat oven to 425°F (220°C) if not already hot from the tofu. Peel carrots if desired and cut on a diagonal into 1/4–1/2-inch thick slices (or into batons for a more rustic texture).

    season and roast

    Toss carrot pieces with olive oil, liquid smoke (or a pinch of smoked paprika plus a splash of water), salt, and black pepper. Spread on a baking sheet in a single layer and roast 18–22 minutes, tossing halfway, until tender and slightly caramelized. If oven space is limited, roast with tofu on a separate sheet or after tofu has finished.

Chopped chickpea patty

    mash and mix

    Place drained chickpeas in a bowl and roughly mash with a fork or potato masher, leaving some whole chickpeas for texture (about 70% mashed). Add chopped red onion, minced garlic, parsley, ground cumin, smoked paprika, lemon juice, breadcrumbs or oat flour, salt, and black pepper. Mix until combined. If mixture is too wet, add an extra tablespoon of breadcrumbs/oat flour.

    form patties

    Divide mixture into 4 equal portions and shape into flat patties about the diameter of the tortillas (3–4 inches) and 1/2-inch thick.

    pan-fry

    Heat neutral oil in a nonstick or cast-iron skillet over medium heat. Add patties and cook 3–4 minutes per side until golden and crisp, pressing gently with a spatula for even contact. Transfer to a plate lined with paper towel to blot excess oil.

Hummus & assembly

    warm tortillas

    Warm tortillas for 20–30 seconds per side in a dry skillet over medium heat or wrap in foil and warm in the oven at 350°F (175°C) for 8–10 minutes.

    assemble wraps

    Lay a warm tortilla flat. Spread about 1/4 cup hummus down the center. Place one chickpea patty, 2–3 roasted tofu slabs (or equivalent amount broken into strips), and a handful (~1/2 cup) of smoked carrots. Add mixed greens and sliced cucumber. Drizzle a little hot sauce or add a squeeze of lemon if using.

    fold and serve

    Fold the sides of the tortilla in, then roll tightly from the bottom to form a wrap. If desired, toast the wrapped seam-side down in a skillet for 1–2 minutes to seal and add crispness. Slice in half and serve immediately with extra hummus or lemon wedges.
