Dilly Maple Ranch (dressing)

    Combine base

    In a medium bowl, whisk together 1/2 cup mayonnaise, 1/2 cup Greek yogurt, 1/4 cup buttermilk, 2 tablespoons maple syrup and 1 tablespoon vinegar until smooth.

    Season and herb

    Add 2 tablespoons finely chopped fresh dill, 1 tablespoon chopped chives, 1 teaspoon Dijon mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 3/4 teaspoon salt, 1/2 teaspoon black pepper and 1 teaspoon lemon juice (if using). Whisk until combined.

    Adjust texture and chill

    If dressing is too thick, stir in additional buttermilk or water, 1 teaspoon at a time, to reach desired drizzling consistency. Taste and adjust salt, pepper, or maple for more sweetness. Chill in refrigerator while preparing other components (at least 10 minutes recommended).

    Blend greens

    In a small food processor or blender, combine 1 cup packed baby spinach, 1/2 cup basil, 1/4 cup parsley, 3 tablespoons olive oil, 1 tablespoon lemon juice, 1/4 teaspoon salt and 1/4 teaspoon black pepper.

    Process to a spread

    Pulse until the greens form a smooth, spreadable paste. If the mixture is too thick, add up to 1 tablespoon water or extra olive oil and blend again to reach a loose sauce texture.

    Taste and set aside

    Adjust seasoning if needed. Transfer to a bowl and set aside at room temperature.

    Warm tortillas (optional)

    Lightly warm the 4 tortillas in a dry skillet over medium heat 20–30 seconds per side or wrap in a damp paper towel and microwave 20 seconds to make them pliable.

    Prepare chicken

    If using cold cooked chicken, shred or chop into bite-sized pieces. Optionally toss chicken with 1 tablespoon olive oil and a pinch of salt and pepper and warm in a skillet over medium heat 2–3 minutes until just heated through.

    Spread sauces on tortilla

    Place a warmed tortilla on a flat surface. Spread about 1 tablespoon of the leafy greens sauce down the center of the tortilla, then drizzle or spread about 2 tablespoons of the dilly maple ranch over the greens sauce area (reserve extra dressing for serving).

    Layer fillings

    Add about 3/4 cup shredded chicken down the center on top of the sauces. Top with 1 cup mixed leafy greens, 1/4 cup sliced cucumber, 1/4 cup shredded carrots, and 2 tablespoons sliced red onion. Sprinkle about 2 tablespoons crumbled feta or goat cheese if using.

    Fold and serve

    Fold the bottom edge up over the filling, fold both sides in, then roll tightly to form a wrap. Repeat for remaining tortillas. Cut each wrap in half on a diagonal and serve with extra dilly maple ranch for dipping (about 1–2 tablespoons per serving).

    Storage

    Assembled wraps are best eaten immediately. To store, wrap tightly in plastic wrap and refrigerate up to 24 hours; the leafy spread will keep but tortillas may soften.
