Bring ingredients together
Remove eggs from refrigerator 5–10 minutes before cooking to take the chill off (optional). Measure salt, pepper and garnish. Have a spatula and plate ready.
Cooking the eggs
Crack eggs
Crack the two eggs into a small bowl or cup (one at a time) to check for shells and freshness. This also makes it easier to slide the eggs into the pan without splashing.
Cook eggs sunny-side up
Gently slide the eggs from the bowl into the pan, keeping the yolks intact and spacing them so they don't touch. Reduce heat slightly if sizzling aggressively. Cook undisturbed for 2–3 minutes, until the whites are set around the yolk but yolks remain runny. For slightly firmer whites, cover the pan with a lid for 30–45 seconds to steam the tops.
