Prepare ingredients

If using frozen berries, thaw briefly and drain excess liquid. Finely grate fresh ginger and measure sugar, lemon juice, cornstarch, and salt.

Place the mixed berries, granulated sugar, grated ginger, lemon juice, and sea salt in a medium saucepan over medium heat.

Bring mixture to a gentle simmer, stirring occasionally to dissolve sugar and release juices. Cook for 6–8 minutes until berries begin to break down but still retain some pieces.

Meanwhile, make a slurry by whisking the cornstarch into the cold water until smooth.

Pour the slurry into the simmering berries while stirring constantly. Continue to simmer for 1–2 minutes until the compote thickens to a spoon-coating consistency. Taste and adjust sugar or lemon if needed. Remove from heat and let cool slightly; reserve about 3 tablespoons of the liquid (strained if needed) for the glaze.

Ginger Berry Glaze

Sift the powdered sugar into a small bowl to remove lumps.

Add 3 tablespoons of the reserved berry liquid (or substitute berry juice) to the powdered sugar, then add the grated ginger and lemon juice. Whisk until smooth. If the glaze is too thick, add an additional teaspoon of liquid at a time until it reaches a pourable but slightly thick consistency.

Whisk in the optional melted butter for extra shine. Taste and adjust ginger or lemon for brightness and spice. Keep glaze at room temperature; it will thicken as it sits.

Streusel Crumble

In a small bowl combine the flour, rolled oats, brown sugar, ground cinnamon, and salt.

Add the cold cubed butter and use a pastry cutter or your fingertips to rub the butter into the dry ingredients until the mixture forms coarse crumbs (pea-sized pieces). Do not overwork; you want some larger crumbs for texture.

Option A - To toast the streusel: spread the crumble on a baking sheet lined with parchment and bake in a preheated 350°F (175°C) oven for 8–10 minutes until golden and fragrant, stirring halfway. Cool completely before using. Option B - For a quick no-bake topping: chill the streusel in the refrigerator for 15–20 minutes to firm the butter before sprinkling over the compote.

Assembly & Finishing

Spoon warm or cooled ginger mixed berry compote into serving bowls or a shallow serving dish.

Drizzle the ginger berry glaze evenly over the top of the compote using a spoon or a small spatula; the glaze should coat the berries and add a glossy gingery finish.

Generously sprinkle the streusel crumble over the glazed compote, leaving some streusel off to maintain crunch if desired.

Serve immediately with vanilla ice cream or whipped cream and garnish with fresh mint leaves. If not serving right away, store compote and streusel separately: compote refrigerated up to 4 days, streusel in an airtight container at room temperature up to 3 days for best crunch.
