    Prepare and cook berries

    Rinse the tayberries gently and drain. In a small saucepan combine the tayberries, 1 tablespoon granulated sugar, 1 tablespoon lemon juice, and 2 tablespoons water.

    Bring the mixture to a gentle simmer over medium-low heat. Once simmering, stir occasionally and gently mash some of the berries with the back of a spoon to release juices (leave many whole for texture).

    Simmer for 6–8 minutes until the compote has thickened slightly and the fruit is soft but still holds some shape. Taste and add up to 1 more teaspoon sugar or a squeeze more lemon if needed to balance acidity and sweetness.

    Remove from heat and let cool to room temperature. The compote will thicken a bit more as it cools.

Honey-Herb Yogurt

    Mix yogurt and herbs

    In a medium bowl whisk the Greek yogurt until smooth. Add 2 tablespoons honey, 1 teaspoon finely chopped fresh mint, 1/2 teaspoon lemon zest, and a pinch of fine sea salt.

    Taste and adjust: add an additional 1/2 tablespoon honey if you prefer sweeter, or a tiny pinch more salt to brighten flavor. Keep chilled until ready to assemble.

Assembly & Garnish

    Assemble serving

    Spoon or layer 1/2 cup of the honey-herb yogurt into serving bowls or glasses (for four servings use about 1/4 cup each as base). Top each portion with about 1/4 cup of the cooled tayberry compote.

    Drizzle each serving with about 1 teaspoon of warmed honey. Sprinkle the optional toasted sliced almonds or granola (about 2 tablespoons divided) for crunch and a light scatter of fresh thyme leaves or the remaining finely chopped mint.

    Serve immediately so the yogurt remains creamy and the toast stays crisp. Alternatively refrigerate components separately for up to 24 hours and assemble just before serving.
