Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, let it cool slightly.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and fold gently to combine. Let it cool to room temperature.

Prepare Fillings

Cut the cucumber, carrot, and avocado into thin strips. Slice the fresh fish into thin pieces.

Assemble Sushi Rolls

Place a nori sheet on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small border at the top. Lay your choice of fillings in a line at the bottom of the rice-covered nori.

Roll the Sushi

Using the bamboo mat, roll the sushi tightly from the bottom to the top, sealing the edge with a little water. Slice the roll into bite-sized pieces.

Make Nigiri

Wet your hands and take a small amount of sushi rice. Shape it into a small oval. Place a slice of fish on top of the rice. Repeat for additional pieces.

Serve

Arrange the sushi rolls and nigiri on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
