Muddle mint
In a cocktail shaker, add the fresh mint leaves and the simple syrup. Gently muddle 6–8 times—just enough to release the mint's aroma and oils without shredding the leaves (press lightly against the side of the shaker).
Build and shake
Add the gin and fresh lime juice to the shaker. Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is well chilled (this also lightly dilutes and aerates the drink).
Garnish and serve
Garnish with a fresh mint sprig slapped briefly between your palms to release oils and aroma; optionally add a lime wheel or twist on the rim. Serve immediately.
If you prefer the Southside on the rocks, strain the shaken mixture over fresh ice in a rocks glass (use the 0.5 cup serving ice) and garnish the same way.
