Prepare the glass

Pour the coarse salt onto a small plate. Rub the lime wedge around the rim of a highball or Collins glass to wet it. Dip the rim into the salt, twisting to coat evenly. Set the glass aside.

Add ice to the prepared glass until it is about three-quarters full (approximately 1 cup of ice).

Optionally thread a grapefruit slice or lime wedge onto the rim or place it in the glass for garnish.

Build the Paloma

Fill the prepared glass (with ice) with 2 oz blanco tequila and 0.5 oz fresh lime juice. If you prefer a slightly sweeter drink, add 0.25 oz simple syrup.

Top the mixture with 4 oz chilled pink grapefruit soda. Stir gently with a bar spoon 4–6 times to combine without flattening the soda.

Taste and adjust: if the cocktail is too tart, add another 0.25 oz simple syrup and stir once more. If you want more citrus brightness, squeeze a little extra lime (about 0.25 oz).

Garnish with the grapefruit slice or lime wedge. Serve immediately with a straw or stirring stick.
