Prepare strawberry purée (if not ready)

Hull and roughly chop 2 medium strawberries. Purée in a blender or mash vigorously with a fork until smooth. Strain through a fine mesh if desired for a silkier texture (yields approx. 1 oz).

Make balsamic reduction (if not ready)

In a small saucepan, combine 1/2 cup good-quality balsamic vinegar and 1 tbsp sugar (optional). Simmer gently over low heat until reduced by about half and syrupy, about 10–15 minutes. Cool completely. Use 0.25 oz in the drink and reserve extra for garnish.

Combine and shake

In a cocktail shaker, add 2 oz white rum, 0.75 oz fresh lime juice, 0.5 oz simple syrup, 1 oz strawberry purée, 0.25 oz balsamic reduction, and 2 dashes Angostura bitters. Add ice (about 6 cubes). Secure the shaker and shake vigorously for 12–15 seconds until well-chilled and slightly frothy.

Strain and serve

Place a large chilled rocks glass with one large ice cube. Double-strain the cocktail into the glass over the large cube using a Hawthorne and fine mesh strainer to remove pulp and ice shards. Allow the drink to settle for a moment so the balsamic and strawberry notes integrate.

Garnish & Pairing

Garnish the drink by skewering 2 thin fresh strawberry slices on a small pick and resting it across the rim. Add a lime wheel on the rim or floated beside the strawberry. Finish with a tiny drizzle (about 0.5 tsp) of reserved balsamic reduction over the top of the drink in a light spiral—this will create a glossy, slightly tart accent 'on the rocks.'

Add a microgreen or small mint sprig tucked next to the strawberry for aroma. Serve immediately with an optional small strawberry-balsamic dessert (e.g., a miniature strawberry tart or a chocolate-strawberry bite with a balsamic glaze) on the side to enhance the pairing and echo the flavors.
