Cocktail

Method

Cocktail

1

Prepare shaker

Chill a coupe or martini glass by filling with ice and setting aside. Add vodka, fresh orange juice, cranberry juice, fresh lime juice, simple syrup, and egg white (if using) to a cocktail shaker.

2

Dry shake

Without ice, seal the shaker and shake vigorously for 15 seconds to emulsify the egg white and incorporate air for a silky texture.

3

Wet shake

Add ice to the shaker (about 6 medium cubes). Seal and shake hard for 12–15 seconds until the shaker is very cold and frosty.

4

Strain

Discard ice from the chilled glass. Double-strain the cocktail into the chilled glass using a Hawthorne strainer and a fine-mesh strainer to remove ice shards and create a smooth top.

Garnish & Finish

5

Express the kaffir lime leaf over the surface of the cocktail: hold the leaf by the stem above the drink and clap or fold it sharply so its essential oils spray onto the drink. Rub the leaf briefly around the rim if desired to increase aroma.

6

Float the kaffir leaf on the surface or skewer it with the orange wheel on a cocktail pick and rest it across the glass. Serve immediately.
