Prepare the roux
In a large, heavy-bottomed pot or Dutch oven over medium heat, add the butter and oil. When melted and shimmering, gradually whisk in the flour. Continue stirring constantly with a wooden spoon or heatproof spatula, maintaining medium-low to medium heat to prevent burning. Cook the flour mixture until it reaches a dark chocolate-brown color, approximately 25–35 minutes. Adjust heat as needed; the roux should smell nutty but not burned.

Once the roux is a dark brown, slowly whisk in 1 cup of the chicken stock to thin slightly, then gradually add the remaining chicken stock and the additional 1 cup beef or chicken stock, whisking constantly to incorporate and remove lumps. Bring to a gentle simmer.

If using duck confit: remove excess fat from the legs, shred or pull the meat from the bones into bite-sized pieces and set aside. If using fresh duck legs and breast: pat dry, season lightly with 1 tsp salt and 1/2 tsp pepper, sear skin-side down in a separate skillet over medium-high heat until skin is crisp and fat renders, about 6–8 minutes; then turn and sear briefly. Remove duck; deglaze pan with 1/4 cup stock and scrape up browned bits, reserve liquid to add to gumbo. When cool, shred or chop duck meat and remove bones. If using duck breast, slice into bite-sized pieces and set aside.

Add the reserved deglazing liquid and any rendered fat to the gumbo pot after the stock has been added and is simmering to build flavor.

Stir in paprika, thyme, cayenne, creole seasoning, remaining 1 tsp salt (adjust to taste) and black pepper. Add Worcestershire sauce and the optional drained diced tomatoes and okra. Taste and adjust seasoning; if you prefer more heat, add a pinch more cayenne.

Return the shredded duck and browned andouille to the pot. Bring gumbo to a gentle simmer (do not boil vigorously) and cook uncovered for 30–45 minutes to meld flavors, stirring occasionally. If the gumbo becomes too thick, thin with additional stock or water 1/2 cup at a time to reach desired consistency.

During the last 10 minutes of simmering, check seasoning and adjust salt, pepper and creole seasoning. If using optional file powder, remove pot from heat and stir in file (1 tsp) just before serving to avoid stringiness.

Ladle gumbo over cooked rice in individual bowls. Garnish with sliced green onions and chopped parsley. Serve with lemon wedges on the side if desired.

Leftovers: cool to room temperature, refrigerate in an airtight container up to 3 days or freeze up to 3 months. Reheat gently over low heat, thinning with stock if necessary; if frozen with file powder added, consistency may thicken, so add liquid when reheating.
