Preparation
Harvesting Agave
Select mature Blue Weber agave plants. Cut the leaves and extract the piñas (hearts) of the agave plants.
Cooking Agave
Roast the piñas in an oven or a traditional horno (oven) at 90°C (194°F) for approximately 24 hours until they become soft and caramelized.
Fermentation
Mashing Agave
Once cooked, mash the piñas using a traditional tahona (stone wheel) or a mechanical shredder to extract the agave juice.
Mixing with Water and Yeast
Combine the extracted agave juice with water and add the active yeast. Stir well to ensure the yeast is evenly distributed.
Fermentation Process
Allow the mixture to ferment in a fermentation tank for 3 to 7 days at a controlled temperature of 20-25°C (68-77°F) until bubbling stops.
Distillation
First Distillation
Transfer the fermented liquid to a pot still and heat it slowly. Collect the distillate until the alcohol content reaches around 25%.
Second Distillation
Redistill the liquid to increase the alcohol content to about 40-50% and remove any impurities.
Filtration
Pass the distilled tequila through activated carbon to remove any unwanted flavors and improve clarity.
