Shuck oysters
Clean oyster shells under cold running water, scrubbing to remove debris. Using an oyster knife and a towel to stabilize, carefully shuck each oyster, preserving as much liquor (briny liquid) in the shell as possible. Discard top shells and arrange the half shells on a baking sheet filled with crushed ice so they sit level. Place one oyster in each half shell and keep chilled until ready to top.
Topping Base
Preheat the oven to 425°F (220°C) and position the rack in the upper third so the tops brown but do not burn.
In a medium skillet over medium heat, melt 4 tbs unsalted butter. Add the minced shallots and cook 2–3 minutes until softened and translucent but not browned. Add the minced garlic and cook 30 seconds until aromatic.
Add the chopped spinach and parsley to the skillet and sauté 1–2 minutes until wilted. Pour in 2 tbs dry white wine and simmer 1 minute to deglaze and loosen any fond. Stir in the 3 slices of finely chopped cooked bacon and remove from heat. Add 1 tbs fresh lemon juice and stir to combine. Let mixture cool 3–5 minutes.
Creamy Cheese Mixture
In a bowl, combine 3 oz softened cream cheese and 2 tbs mascarpone (or crème fraîche). Whisk until smooth and creamy. Stir in 1/4 cup grated Parmesan and 1/4 cup shredded Gruyère. Add 1/2 tsp Worcestershire sauce and 1/2 tsp Dijon mustard, then fold in the cooled spinach-parsley-bacon mixture. Taste and season with 1/2 tsp salt and 1/4 tsp black pepper (adjust to taste). If the mixture feels too stiff, add 1–2 tsp of the reserved oyster liquor or a splash of cream to loosen.
Spoon about 1 to 1 1/2 tablespoons of the creamy topping onto each oyster, creating a small mound that covers the oyster but does not overflow the shell.
Mix 1/2 cup fresh breadcrumbs with 2 tsp melted butter in a small bowl until evenly moistened. If desired, stir in 1 tsp hot sauce for a subtle kick. Sprinkle approximately 1 teaspoon of the breadcrumb mixture over each topped oyster to create a golden crust.
Place the baking sheet with oysters in the preheated oven. Bake for 8–10 minutes, until the topping is bubbling and the breadcrumbs are golden brown. For a more deeply browned finish, place under the broiler for 1–2 minutes—watch carefully to prevent burning.
Remove oysters from the oven and let rest 1–2 minutes. Transfer the shells to a serving platter on a bed of crushed ice if desired. Serve immediately with lemon wedges alongside and extra hot sauce if using.
