Balsamic Reduction

Simmer reduction

Pour 1/2 cup balsamic vinegar into a small saucepan. Add 1 teaspoon brown sugar or honey if you prefer a slightly sweeter, faster-thickening glaze. Bring to a gentle simmer over medium heat, then reduce to low and simmer uncovered until the liquid is reduced by about half and coats the back of a spoon — about 8–12 minutes. Stir occasionally to prevent scorching.

Remove from heat and let cool. The reduction will thicken more as it cools; transfer to a small bowl or squeeze bottle for easy drizzling.

Prepare bread

If you like a warm, slightly toasted sandwich, split the ciabatta rolls and lightly butter the cut sides (about 1 tablespoon total for both). Toast in a skillet over medium heat, cut side down, until golden and crisp, 1–2 minutes. Alternatively, toast under a broiler for 1–2 minutes. If not toasting, simply split the rolls and proceed.

Slice mozzarella and tomato

Slice the fresh mozzarella into 1/4-inch (about 6 mm) slices. Slice the tomatoes into even 1/4-inch rounds. Pat both mozzarella and tomato slices dry on paper towels for 30–60 seconds to remove excess moisture so the sandwich doesn't get soggy.

Season tomato

Arrange tomato slices in a single layer on a plate or cutting board. Drizzle about 1/2 tablespoon olive oil over the tomatoes, then sprinkle 1/4 teaspoon of the salt and a light grind of the black pepper (about 1/8 teaspoon). This brings out the tomato flavor.

Assemble layers

On the bottom half of each roll, lay down a few basil leaves to form a barrier that helps prevent sogginess. Place mozzarella slices in an even layer over the basil, then top with seasoned tomato slices. Tuck additional basil leaves (about 4–6 per sandwich) between tomato and mozzarella for fresh aroma and flavor. If using arugula, add it now.

Dress and finish

Drizzle about 1/2 tablespoon extra virgin olive oil over the assembled ingredients of each sandwich. Sprinkle the remaining 3/4 teaspoon salt and the remaining black pepper evenly across both sandwiches (adjust to taste). Finish by drizzling 1 to 2 teaspoons of the cooled balsamic reduction over each sandwich — start with less; you can add more to taste.

Close and serve

Place the top half of the roll on each sandwich and press gently. Slice each sandwich in half on the diagonal if desired. Serve immediately so the mozzarella remains fresh and the bread is crisp. Leftovers: store components separately (tomato/mozzarella and bread) and assemble just before serving to avoid sogginess.
