Marinating the Meats and Seafood

In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper. Mix well. Place the beef steak, pork chops, chicken thighs, salmon fillets, and shrimp into a resealable plastic bag or a shallow dish. Pour the marinade over the meats and seafood, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for best flavor.

Preparing the Grill

Soak mesquite wood chips in water for at least 30 minutes. Preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals and add the drained wood chips directly onto the coals.

Grilling the Meats and Seafood

Remove the marinated meats and seafood from the refrigerator. Place them on the grill. Grill the beef steak for about 6-8 minutes per side for medium-rare, pork chops for 5-7 minutes per side, chicken thighs for 6-7 minutes per side, salmon fillets for 4-6 minutes per side, and shrimp for 2-3 minutes per side, or until cooked through. Make sure to turn them halfway through cooking.
