Prepare gummy worms

If using store-bought plain gummy worms remove any factory sugar coating by wiping lightly with a paper towel. If homemade, unmold and trim any excess. Arrange 12 pieces in a single layer on the freeze dryer tray or rimmed baking sheet so they do not touch. Lightly brush each worm with a thin film of corn syrup (about 1/4 teaspoon per worm) — this gives the freeze-dry coating something slightly tacky to help the powders adhere without making them sticky.

Place the tray in your freeze dryer following manufacturer instructions. Typical home freeze dry cycles for gummy candies run 24–36 hours depending on machine and thickness. Run a full cycle until gummies are dry, crisp, and brittle to the touch (no cold liquid spots remain). Remove tray and allow worms to equilibrate for 10–15 minutes at room temperature in the machine chamber before unloading to reduce collapse risk.

Make fruit powder blend

Combine freeze-dried raspberry powder and freeze-dried mango powder in a small bowl. Sift or pass through a fine-mesh sieve to remove any clumps so the coating is ultra-fine.

Make sour-sweet dust

In a separate small bowl, whisk together the fine granulated sugar and powdered citric acid until uniform. Taste a tiny pinch to confirm sour level (citric acid is potent) and adjust by up to 1/4 teaspoon if you want more or less tang.

Combine powders

Fold the fruit powder into the sugar-citric mixture. Use a fine sieve or shaker to ensure an even, fine dust. If desired, add 1 teaspoon of neutral oil to a small spray bottle or lightly apply to a silicone brush and very lightly mist one side of each freeze-dried worm so the powder will adhere — use sparingly to avoid making the worms sticky.

Coat the worms

Working one at a time, hold a freeze-dried worm over a shallow bowl of the powder blend and gently roll it through the powder so it picks up an even coating. Alternatively, place a small amount of powder in a resealable bag with the worms and gently shake until evenly coated. Tap off excess powder. Repeat until all worms are evenly coated. If any worms feel damp from the oil, air them on a tray for 10 minutes to set the coating.

For an extra intense outer crunch, optionally place the powdered, coated worms back into the freeze dryer for 1–2 hours to dry any residual surface moisture and lock in the powder — this step is optional and depends on your machine and humidity.

Finishing & Storage
