Prepare chicken

Pound the chicken breast to an even thickness (about 3/4 inch) using a meat mallet or the bottom of a heavy pan. Pat dry with paper towels.

Season

In a small bowl combine 1 tbs olive oil, 1 tsp garlic powder, 1 tsp smoked paprika, 3 tsp salt, and 1 tsp black pepper. Rub the mixture evenly over both sides of the chicken breast.

Cook chicken

Heat a nonstick or cast-iron skillet over medium-high heat. Add a small drizzle of oil or coat the pan lightly. When hot, add the chicken breast and cook 4–5 minutes per side until the internal temperature reaches 165°F (74°C) and juices run clear. Reduce heat slightly if the exterior browns too quickly.

Toast bun and assemble

While the chicken rests 3–4 minutes, split the bun and spread 1 tsp butter on the cut sides (optional). Toast in a dry skillet or toaster until golden. Spread 1 tbs mayonnaise on the bottom bun, place lettuce, tomato slices, then the cooked chicken breast, and top with the bun. Slice in half if desired.

Prepare potato

Wash and scrub the potato. Cut into 1/4–1/2 inch thick sticks. Pat dry thoroughly with paper towels to remove moisture.

Coat and season

Place the cut fries in a bowl with 1 tsp cornstarch, 1 tbs oil, 1 tsp salt, 1 tsp paprika, and 1/2 tsp garlic powder. Toss until evenly coated.

Cook fries

Option A - Oven: Preheat oven to 425°F (220°C). Spread fries in a single layer on a parchment-lined baking sheet. Bake 20–25 minutes, flipping once, until golden and crisp. Option B - Pan-fry: Heat 2–3 tbs vegetable oil in a skillet over medium-high heat. Add fries in a single layer and cook 6–8 minutes, turning occasionally, until browned and tender. Drain on paper towels if pan-fried.

Finish

Taste and adjust seasoning with a pinch more salt if needed. Serve immediately alongside the sandwich.

Regular-Sized Beverage

Fill a glass with 4 ice cubes if desired. Pour 12 fl oz chilled cola or iced tea into the glass. Stir briefly and serve.

Place the store-bought cookie in its wrapper or on a small plate. If you prefer warm, microwave on high for 8–10 seconds before serving (optional).
