In a large nonreactive container or pot, combine 2 liters cold water, 1 cup kosher salt, 1 cup sugar, 1 tablespoon peppercorns, 3 bay leaves, 4 smashed garlic cloves, and 4 thyme sprigs. Stir until salt and sugar dissolve. Add 2 cups ice to cool the brine to refrigerator temperature.

Remove giblets from the chicken cavity. Place the whole chicken into the brine breast-side down (or rotate so it is fully submerged). If necessary, weigh it down with a plate. Cover and refrigerate for 4 to 8 hours (no more than 12 hours for a 4–5 lb bird).

After brining, remove the chicken from the brine and discard the brine. Pat the chicken very dry inside and out with paper towels. For extra-crisp skin, transfer the chicken to a rack set over a baking sheet and refrigerate uncovered for 2–6 hours to dry the skin.

Seasoning & Trussing

Prepare butter rub

Combine 4 tablespoons softened unsalted butter and 2 tablespoons olive oil in a small bowl. Mix in 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, 1 teaspoon dried thyme, 1 teaspoon coarse black pepper, and 1 teaspoon kosher salt (for rub) until uniform.

Season chicken

Loosen the skin over the breasts by sliding your fingers gently between skin and meat. Spread about two-thirds of the butter mixture under the skin over both breasts and on the breast meat. Rub the remaining butter all over the outside of the chicken, including legs and thighs.

Stuff cavity

Place the halved lemon, the remaining smashed garlic (if any), and a rosemary sprig and 1–2 thyme sprigs into the cavity for aromatic flavor.

Truss

Tie the legs together with kitchen twine and tuck the wing tips under the back to create a compact shape for even cooking on the rotisserie spit.

Mounting & Cooking on Rotisserie

Preheat and secure

Preheat your rotisserie according to manufacturer instructions — typically medium-high heat (about 375–400°F / 190–205°C). Thread the spit through the cavity, center the chicken, and secure tightly with the forks so it is balanced.

Start rotisserie

Set the motor to rotate the spit. If your rotisserie has a drip tray, fill it with about 1 cup of water or stock to catch drippings and prevent flare-ups.

Cook time

Roast on the rotisserie for about 15–20 minutes per pound. For a 4 lb chicken, plan 60–80 minutes. Aim for an internal temperature of 165°F (74°C) in the thickest part of the thigh without touching bone. If you prefer a crisper skin, increase heat for the final 5–10 minutes while monitoring closely.

Check balance & glaze (optional)

Halfway through cooking, check that the chicken is still balanced and the forks are secure. If desired, baste quickly with pan drippings or a little melted butter to add shine for the last 10–15 minutes.

Resting & Serving

Remove and rest

When the thermometer reaches 165°F (74°C) in the thigh, stop the rotisserie and carefully remove the spit. Transfer the chicken to a cutting board and tent loosely with foil. Rest for 10–15 minutes to allow juices to redistribute.

Carve

Carve by removing the legs and thighs first, then the wings, and slice the breast meat against the grain. Spoon any collected pan drippings or 1 cup warmed chicken stock over carved pieces if desired.

Garnish

Sprinkle chopped fresh parsley over the carved chicken and serve with lemon wedges.
