Boysenberry Sauce
Cook fruit
In a medium saucepan, combine the boysenberries, 3 tablespoons granulated sugar, 1 tablespoon lemon juice, and 2 tablespoons water. Bring to a gentle simmer over medium heat, stirring occasionally, and cook 6–8 minutes until the berries soften and release their juices.
Thicken and strain (optional)
Mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Stir the slurry into the simmering berries and cook 1–2 more minutes until the mixture thickens slightly. Remove from heat and, if you prefer a smooth sauce like Knott's, press the berry mixture through a fine-mesh sieve into a bowl, discarding seeds and solids; alternatively leave it chunky for texture. Let cool to room temperature, then refrigerate until needed.
Caramel Sauce
Melt sugar
Place 1 cup granulated sugar in the saucepan over medium heat. Stir constantly at first with a heatproof spatula to evenly distribute as it begins to melt. Once edges melt, reduce stirring to gentle swirling to avoid crystallization. Continue until all sugar becomes a deep amber liquid (about 6–8 minutes). Watch carefully to prevent burning.
Add cream and finish
Slowly pour in 1 cup heavy cream while stirring (mixture will bubble strongly). Allow to boil gently for 30–60 seconds until slightly thickened. Remove from heat and stir in 1 teaspoon vanilla extract and 1 teaspoon fine sea salt. If you want a slightly thinner, drizzleable sauce like theme-park caramel, add 1–2 tablespoons warm cream to reach desired consistency. Let cool slightly before using; caramel will thicken as it cools.
Cool and store
Transfer caramel to a heatproof container and let cool to warm room temperature. Use warm for drizzling, or refrigerate up to 2 weeks and gently reheat before serving.
Assembly & Serving
Warm the boysenberry sauce slightly if refrigerated (microwave 10–20 seconds or warm on the stove) so it’s pourable but not hot.
Scoop vanilla ice cream into bowls or cones. Drizzle a generous spoonful of warm caramel over each scoop, then spoon 1–2 tablespoons of boysenberry sauce on top. For the Knott’s-inspired contrast of sweet caramel and tangy berry, swirl them lightly with a spoon so you get streaks of both.
Sprinkle with toasted chopped pecans or walnuts if using. Serve immediately.
