Method
Entrée (Grilled Chicken Sandwich)
Prepare chicken
Trim any fat from the chicken breast and, if very thick, butterfly or lightly pound to an even thickness about 3/4 inch for even cooking.
Season both sides of the chicken breast with 3/4 tsp kosher salt, 1/2 tsp black pepper and 1/2 tsp garlic powder. Rub 1 tablespoon olive oil over the chicken to help seasoning adhere.
During the last minute of cooking, place a slice of cheddar cheese on the chicken, cover the pan briefly to melt the cheese.
While the chicken rests 3–5 minutes, butter the hamburger bun halves with 1/2 tablespoon softened butter and toast them cut-side down in a clean skillet or under the broiler until golden, about 1–2 minutes.
Assemble the sandwich: on the bottom bun place lettuce leaves, tomato slices, the grilled chicken with melted cheese, and pickles if using. Top with bun and serve immediately.
Side (Seasoned Fries)
Preheat oven to 425°F (220°C) if roasting. If frying, heat oil in a deep pan to 350°F (175°C).
Wash and scrub the potatoes. Cut into 1/4- to 1/2-inch fries (matchstick or wedge style as preferred). Pat dry thoroughly with paper towels — removing moisture helps crispness.
For oven method: Toss potato sticks with 1–2 tablespoons vegetable oil (reserve remaining oil) until evenly coated. Spread in a single layer on a baking sheet lined with parchment. Bake 25–30 minutes, flipping halfway, until golden and crisp. For frying method: Fry the potatoes in batches at 350°F (175°C) until golden, about 3–5 minutes per batch; drain on paper towels.
In a small bowl combine 1 tsp kosher salt, 1/2 tsp paprika, 1/4 tsp onion powder, 1/4 tsp garlic powder and 1/2 tsp black pepper. Immediately after fries come out of oven or fryer, sprinkle the seasoning evenly and toss to coat.
Serve fries hot with ketchup or dipping sauce on the side.
Optional Condiments & Serving
Plate the grilled chicken sandwich with the seasoned fries. Offer ketchup or preferred sauce and pickle slices for guests to add to the sandwich.
