Watermelon Purée

Prepare and blend
Remove rind and white pith from the watermelon and cut flesh into ~1-inch cubes until you have about 6 cups. Place cubes in a blender in batches if needed. Add 1 tablespoon fresh lime juice and, if desired, 1 tablespoon granulated sugar to brighten flavor. Blend on high until completely smooth, about 30–45 seconds per batch.

Strain (optional) and chill: For a silky-smooth texture, pour the purée through a fine-mesh sieve into a bowl, pressing with a spatula to extract liquid. Discard solids. Chill the purée in the refrigerator while you prepare the mint simple.

Make mint simple syrup
In a small saucepan, combine 1/4 cup water and 2 tablespoons granulated sugar. Bring to a gentle simmer over medium heat, stirring until sugar dissolves, then remove from heat. Add 12–15 fresh mint leaves to the warm syrup, press them gently with a spoon to submerge, and let steep for 10 minutes. Strain out leaves and cool completely. Reserve 2–3 tablespoons of the syrup for the batch; refrigerate any extra for another use.

Muddle extra mint for aroma
Place the remaining fresh mint leaves (about 5–8) in a large pitcher. Using a wooden muddler or the back of a spoon, gently press and twist the leaves 6–8 times to release essential oils—do not shred them. This adds fresh mint aroma to the lemonade.

Combine ingredients: Into the pitcher with muddled mint, pour the chilled watermelon purée (about 4–4.5 cups strained purée) and 4 cups chilled all-natural lemonade. Add the cooled mint syrup (2–3 tablespoons) and stir gently to combine. Taste and adjust sweetness—if the mixture tastes flat, stir in up to 1 tablespoon additional sugar or 1–2 tablespoons more mint syrup; if too sweet, add a splash (1–2 tablespoons) of lemon juice or extra lemonade.

Chill and dilute to desired strength: If the purée makes the drink too thick, add up to 1 cup extra lemonade or cold water, mixing and tasting until you reach your preferred consistency. Refrigerate for at least 15 minutes to let flavors marry or serve immediately over ice.

Storage: Keep leftover lemonade covered in the refrigerator up to 48 hours. Stir before serving; fresh mint aroma fades over time—refresh with a few muddled leaves if needed.
