Prep glass
Chill an old-fashioned or rocks glass by filling it with ice and setting it aside while you prepare the cocktail (optional).

Muddle mint
In a mixing glass or shaker, place the mint sprig and simple syrup. Gently slap or press the mint with a muddler or back of a spoon 2–3 times to release aromatic oils. Do not over-muddle (avoid shredding the mint).

Combine ingredients
Add the Crown Royal (1.5 oz), orange liqueur (0.25 oz), peach purée (0.5 oz), fresh lemon juice (0.5 oz) and 2 dashes of aromatic bitters to the mixing glass with the muddled mint.

Shake
Fill the shaker with ice (not the cracked ice reserved for serving) and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Prepare glass for serving
Discard the chilling ice from the glass (if you used it). Add about 3/4 cup cracked ice to the chilled rocks glass.

Strain and build
Double-strain the cocktail over the cracked ice into the prepared glass through a fine strainer to remove mint bits and any solids from the purée.

Garnish and finish
Gently slap a fresh mint sprig to release its aroma and place it in the glass as a garnish. Add a peach slice on the rim or float it on top if desired. Optionally add one more dash of aromatic bitters on the top of the foam for aroma.

Serve
Serve immediately with a short straw or stirring pick so the drinker can stir lightly before sipping to integrate flavors.
