Peach Purée

Prepare peaches
If using fresh peaches, blanch in boiling water 20–30 seconds, transfer to an ice bath, then peel and pit. Chop peaches into roughly 1-inch pieces so they blend evenly.

Cook briefly (optional for deeper flavor)
Place chopped peaches, 2 tablespoons granulated sugar, 1 tablespoon fresh lemon juice, and 2 tablespoons warm water in a small saucepan. Cook over medium-low heat for 4–5 minutes, stirring, until peaches are softened and sugar is dissolved. This step mellows raw peach sharpness and helps purée smoothly. Remove from heat and cool 5 minutes.

Purée
Transfer the peach mixture to a blender or use an immersion blender. Purée until smooth (about 30–45 seconds). Taste and add up to 1 additional tablespoon sugar or lemon juice if needed for balance. Strain through a fine-mesh sieve into a bowl if you prefer a very smooth purée (optional). Yield: about 1/2 to 3/4 cup purée.

Make lemonade base
In a pitcher or large measuring cup, combine 3 tablespoons fresh lemon juice and 3 tablespoons simple syrup. Add 1 cup cold water and stir until combined. Taste and adjust sweetness by adding more simple syrup if desired.

Chill
Add 1 cup ice to the lemonade to cool it down. You can prepare lemonade ahead and chill in the refrigerator.
Iced Tea & Assembly

Prepare iced tea
Brew strong black tea (use double-strength or two tea bags per cup) and cool to room temperature, then chill. Measure out 1 cup cooled iced tea for the recipe.

Combine peach purée with lemonade
In a large glass or serving pitcher, spoon in 2–3 tablespoons of the peach purée per 12-oz serving (adjust to taste). Add 1/3 cup of the lemonade base to the purée and stir vigorously until the purée is fully integrated and the mixture is slightly frothy.

Add iced tea
Pour 1/3 cup of chilled iced tea into the peach-lemonade mixture, gently stir once to combine. For a full 12-oz glass, fill with ice as desired and then top with additional iced tea or lemonade to reach the glass volume, maintaining a roughly 1:1 ratio of iced tea to lemonade overall (adjust to preference).

Garnish and serve
Garnish with fresh mint leaves and a peach slice if desired. Serve immediately with a straw and stir before drinking so any settled purée is reincorporated.
