Apple Juice (serves 2)

    Prepare apples

    Wash apples well. Core and cut into quarters. If your blender/juicer can handle unpeeled fruit, leave skin on for nutrients; otherwise peel before cutting.

    Blend

    Place apple pieces and 1/2 cup cold water into a blender. Blend at high speed until smooth (30–60 seconds). If using a juicer, feed quarters through the juicer and skip blending.

    Strain (optional)

    For clear juice, pour blended apples through a fine mesh sieve or nut milk bag into a pitcher, pressing to extract as much liquid as possible. For a pulpy juice, skip this step.

    Season and chill

    Stir in 1 tablespoon fresh lemon juice and optional 1 teaspoon honey or sugar to taste. Add ice cubes to glasses and pour juice over ice. Serve immediately.

Orange Juice (serves 2)

    Prepare oranges

    Roll oranges on the counter under your palm to loosen juice. Cut each orange in half crosswise.

    Juice

    Use a handheld reamer or electric citrus juicer to extract juice from the orange halves into a measuring cup. Strain through a sieve if you prefer pulp-free juice.

    Adjust and serve

    If the juice is too thick or pulpy, stir in up to 2 tablespoons cold water. Taste and add optional 1 teaspoon simple syrup or honey if you want it sweeter. Fill glasses with ice and pour juice over ice. Serve immediately.

Pineapple Juice (serves 2)

    Prepare pineapple

    Cut off the crown and base of the pineapple. Stand upright and slice off the skin in strips, removing the eyes. Cut the fruit into quarters lengthwise and remove the tough core from each quarter. Chop flesh into chunks.

    Blend or juice

    Put pineapple chunks into a blender with 2 tablespoons cold water and 1 teaspoon lime juice. Blend until smooth (30–60 seconds). If using a juicer, process chunks through the juicer.

    Strain and sweeten

    For a clearer juice, strain through a fine mesh sieve or cheesecloth. Taste and add optional 1 teaspoon honey if desired. Add ice to glasses and serve immediately.

Cranberry Juice (serves 2)

    Mix concentrate

    In a pitcher, combine 1/2 cup unsweetened cranberry concentrate with 1 cup cold water. Stir until fully blended.

    Brighten and sweeten

    Whisk in 2 tablespoons fresh orange juice for brightness (optional). Add 2 teaspoons simple syrup or honey, or adjust to taste, until desired sweetness is reached.

    Chill and serve

    Fill glasses with ice, pour cranberry juice over ice, and serve. Keep any leftover juice refrigerated up to 3 days.
