Preparing the Carnitas
Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.
Mix the Marinade
In a large bowl, combine orange juice, lime juice, minced garlic cloves, cumin, oregano, salt, and black pepper. Mix well.
Marinate the Pork
Place the pork chunks in a slow cooker. Pour the marinade over the pork, making sure all pieces are well coated. Add the whole onion on top.
Cook the Pork
Cover the slow cooker and cook on low for 8 hours or until the pork is tender and easily shreds with a fork.
Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker to soak up the juices.
Assembling the Tacos
Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
Serve
Serve the tacos with lime wedges on the side for squeezing over the tacos to taste.
