Prepare equipment

Line a large colander with a double layer of fine cheesecloth (or a clean kitchen towel) and set it over a deep bowl to catch whey. Have a slotted spoon or skimmer and an instant-read thermometer ready.

Combine milk and cream in a wide, heavy-bottomed pot. Heat gently over medium heat, stirring occasionally to prevent scorching, until it reaches 85–90°C (185–195°F). If you don't have a thermometer, heat until the milk is steaming and just below simmer — small bubbles will form around the edge but it should not boil.

Remove the pot from heat. Stir in the lemon juice gently for about 10–15 seconds, then let the milk sit undisturbed for 10–15 minutes. During this time the milk should curdle and form white curds separated by a translucent whey. If curds are weak, add up to 1 tablespoon more lemon juice and wait another 5 minutes.

Carefully ladle or pour the curds into the prepared cheesecloth-lined colander. Allow whey to drain at room temperature for 20–30 minutes for a soft, spreadable ricotta. For a firmer ricotta (less moist), refrigerate the drained curds, covered, for 1–2 hours to drain more. Reserve whey for other uses (soup, bread) if desired.

Transfer the drained curds to a bowl. Sprinkle in the fine sea salt and use a hand mixer or whisk to whip the ricotta for 30–60 seconds until smooth and creamy. Taste and adjust salt if needed.

Finishing & Serving

Prepare the pane: slice the rustic bread about 1–1.5 cm thick. If you prefer warm bread, lightly toast or grill the slices until golden and crisp at the edges.

Spoon the whipped ricotta into a shallow serving dish or spread directly onto a platter. Gently create a few shallow wells or swirls in the surface with the back of a spoon.

Drizzle the organic honey over the ricotta evenly (about 1 tablespoon per serving, adjust to taste). For a restaurant-style finish, use a back-and-forth motion to create thin ribbons of honey across the surface.

Optional finishing touches: lightly drizzle a small amount of extra-virgin olive oil (about 1 tsp over the whole dish), scatter a few sea salt flakes, and grind a little black pepper over the top. Grate a small amount of fresh lemon zest for bright aroma if desired.

Serve immediately with the sliced pane on the side for spreading or dipping. Encourage guests to spread a generous amount of whipped ricotta on bread and finish with an extra drizzle of honey if they like.
