Preparation
Infuse the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream over medium heat. Heat until the mixture begins to steam, but do not let it boil.
Add Sugar and Ginger
Once the milk and cream are steaming, add the granulated sugar and fresh ginger to the mixture. Stir until the sugar is fully dissolved.
Let it Cool and Strain
Remove the saucepan from heat and let the mixture cool for about 10 minutes. Then strain the mixture through a fine mesh sieve into a bowl to remove the ginger pieces.
Add Honey and Vanilla
While the mixture is still warm, whisk in the honey, vanilla extract, and a pinch of salt until well combined.
Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the mixture for at least 4 hours or overnight for best results.
Churn the Gelato
Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
Freeze the Gelato
Transfer the churned gelato to an airtight container and freeze for at least 4 hours to firm up before serving.
