Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and set aside.

Sauté Aromatics
In a large skillet or wok, heat the vegetable oil over medium heat. Add the chopped shallots and sauté until they are translucent.

Add Ginger and Garlic
Stir in the grated ginger and minced garlic, cooking for about 1 minute until fragrant.

Caramelize the Sugar
Add the brown sugar and stir continuously until it melts and begins to caramelize, about 2-3 minutes.

Cook the Chicken
Add the chicken pieces to the skillet, stirring to coat them in the caramel mixture. Cook until the chicken is no longer pink.

Add Sauces
Pour in the soy sauce, fish sauce, and black pepper. Stir well to combine, then lower the heat and let simmer for 15 minutes until the sauce thickens.

Garnish with chopped green onions and sesame seeds (if using) before serving. Enjoy with steamed rice.
