Prepare the Rice Noodles
Soak the rice noodles in warm water for about 30 minutes until they are soft. Drain and set aside.

Cook the Tofu
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove and set aside.

Sauté the Vegetables
In the same pan, add another tablespoon of vegetable oil. Add minced garlic, sliced red bell pepper, and julienned carrot. Sauté for about 3-4 minutes until the vegetables are tender.

Combine Noodles and Tofu
Add the soaked rice noodles and cooked tofu to the pan. Stir gently to combine with the sautéed vegetables.

Add Sauce Ingredients
In a small bowl, mix soy sauce, peanut butter, and lime juice. Pour this mixture over the noodle and vegetable mix. Toss well to ensure everything is coated evenly.

Finish with Garnishes
Add bean sprouts, chopped green onions, and chili flakes. Mix well and cook for an additional 2-3 minutes. Serve hot, garnished with chopped peanuts and cilantro.
