Prepare the Broth
In a large pot, add the beef bones and cover with water. Bring to a boil and then reduce to a simmer for about 15 minutes. This step helps to remove impurities.

Char the Aromatics
While the bones are boiling, char the onion and ginger over an open flame or in a broiler until slightly blackened. This enhances the flavor of the broth.

Add Ingredients to Broth
After 15 minutes, discard the water and rinse the bones. Return the bones to the pot, add the charred onion, ginger, star anise, cinnamon stick, cloves, cardamom pods, fish sauce, sugar, and salt. Cover with about 4-5 quarts of water.

Simmer the Broth
Bring the pot to a boil, then reduce the heat to low and let it simmer for 4-6 hours. The longer, the better for flavor.

Prepare the Noodles
In the last 30 minutes of the broth cooking, soak the rice noodles in hot water for about 30 minutes until soft, then drain.

Cook the Beef
Thinly slice the beef brisket and sirloin. During the last 10 minutes of the broth cooking, add the brisket to the pot to cook through.

Assemble the Pho
In bowls, place the soaked rice noodles, cooked brisket, and raw sirloin. Ladle the hot broth over the top and garnish with bean sprouts, basil leaves, lime wedges, jalapeños, and green onions.
