    Prepare the Ingredients

    Cut the beef into 1.5-inch cubes. Slice the carrots into thick rounds. Chop the onions, and mince the garlic and ginger.

    Sear the Beef

    In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the beef cubes in batches, searing them on all sides until browned. Remove and set aside.

    Sauté Aromatics

    In the same pot, add the onions, garlic, and ginger. Sauté for about 3-4 minutes until fragrant and softened.

    Combine Ingredients

    Return the beef to the pot. Add the carrots, beef broth, star anise, cinnamon stick, fish sauce, soy sauce, sugar, black pepper, and salt. Stir well.

    Simmer the Stew

    Bring to a boil, then reduce the heat to low. Cover and let simmer for about 2-3 hours, or until the beef is tender.

    Serve

    Remove the star anise and cinnamon stick before serving. Adjust seasoning if needed. Garnish with fresh cilantro and serve with lime wedges.
