    Prepare the Broth

    In a large pot, add the beef bones and cover with water. Bring to a boil and let it boil for about 10 minutes. This will help to remove impurities.

    Add Aromatics

    After boiling, discard the water and rinse the bones. Return the bones to the pot, add 4 quarts of fresh water, halved onion, and ginger. Add star anise, cinnamon stick, and cloves. Bring to a boil, then reduce to a simmer.

    Simmer the Broth

    Let the broth simmer for at least 4 hours, skimming off any foam that rises to the surface. If you have time, simmering for up to 8 hours will enhance the flavor.

    Cook the Brisket

    After the broth has simmered, add the beef brisket and cook until tender, about 30 minutes. Remove the brisket, let it cool, and slice thinly.

    Season the Broth

    Once the brisket is removed, add fish sauce and sugar to taste. Adjust seasoning as needed.

    Prepare the Noodles

    In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.

    Assemble the Pho

    In bowls, add a portion of the cooked noodles, and top with sliced brisket. Ladle hot broth over the top.

    Garnish and Serve

    Garnish with fresh basil, bean sprouts, lime wedges, sliced chili peppers, and green onions. Serve immediately.
