Short Rib

Method

Short Rib

  1. 1

    Prepare the Short Ribs

Season the beef short ribs with salt and black pepper on all sides.

  2. 2

    Sear the Ribs

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the seasoned short ribs and sear until browned on all sides, about 8-10 minutes. Remove the ribs from the pot and set aside.

  3. 3

    Sauté Aromatics

In the same pot, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

  4. 4

    Slow Cook the Ribs

Return the short ribs to the pot. Add beef broth, Worcestershire sauce, and bay leaves. Bring to a simmer, then cover and cook on low heat for 3-4 hours until the meat is tender and falls off the bone.

  5. 5

    Shred the Meat

Once cooked, remove the ribs from the pot and let them cool slightly. Shred the meat using two forks, discarding any bones and excess fat.

Horseradish Crema

  1. 6

    Make the Crema

In a small bowl, combine sour cream, prepared horseradish, lemon juice, salt, and black pepper. Mix well until smooth and creamy. Adjust seasoning to taste if necessary.

Assembly

  1. 7

    Assemble the Sliders

Take a slider bun, layer on some shredded short rib, top with a slice of cheddar cheese, and a dollop of horseradish crema. Sprinkle with chopped parsley for garnish. Place the top bun on and serve immediately.
