Begin by heating 4 liters of water to about 70°C (158°F). Add the pale malt and crystal malt to the water to create a mash. Stir well and maintain the temperature for about 60 minutes.

Mashing the Grains

After mashing, drain the liquid (wort) from the grains through a fine mesh strainer into another pot. Sparge with an additional liter of hot water to extract more sugars.

Lautering

Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. 30 minutes into the boil, add the Saaz hops.

Boiling the Wort

After the boiling process, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Cooling the Wort

Transfer the cooled wort into a sanitized fermenter. Pitch the yeast into the wort and seal the fermenter with an airlock. Allow it to ferment at cooler temperatures (around 12-15°C or 54-59°F) for 2-3 weeks.

Fermentation

After fermentation is complete, you can add the specialty syrup and a dash of bitters for extra flavor. Bottle the lager using sanitized bottles and cap them.

Bottling

Let the bottles condition for at least 2 weeks at room temperature before chilling and enjoying your homemade 'Arizona Light' Lager.
