    Prepare the Pork

    Cut the pork shoulder into large chunks. Season generously with salt and black pepper.

    Sear the Pork

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned pork chunks and sear until browned on all sides, about 5-7 minutes. Remove the pork and set aside.

    Sauté Aromatics

    In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Deglaze the Pot

    Pour in the chicken broth, scraping the bottom of the pot to release any browned bits.

    Add Seasoning and Pork

    Return the seared pork to the pot. Add the chopped roasted green chiles and cumin. Stir to combine.

    Braise the Pork

    Bring the mixture to a simmer, cover the pot, and reduce the heat to low. Let it braise for 2 hours, or until the pork is tender and easily shreds with a fork.

    Prepare for Serving

    Once cooked, shred the pork using two forks. Stir in the sliced roasted red peppers.

    Add Cheese

    Sprinkle the shredded asadero cheese over the top of the pork and cover the pot to let it melt for about 5 minutes.

    Spoon the green chile pork into bowls and serve hot. Enjoy!
