Method

Fries

  1. 1

    Bake or Fry Fries

Preheat oven to 425°F (220°C) if baking. Spread frozen fries in a single layer on a rimmed baking sheet; toss with 1 tablespoon oil and 1/2 tsp salt. Bake for 20–25 minutes, flipping once halfway, until golden and crisp. Alternatively, deep-fry per package instructions until crisp, then drain on paper towels and season with 1/2 tsp salt.

  2. 2

Keep fries warm in a low oven (200°F/95°C) while you prepare the steak and toppings.

Steak & Veggies

  1. 3

    Prep Steak

If not pre-sliced, partially freeze the steak for 20–30 minutes to firm it, then slice as thin as possible across the grain. Season the slices with 1 tsp kosher salt and 1/2 tsp black pepper.

  2. 4

    Cook Vegetables

Heat 1 tablespoon oil in a large skillet or cast-iron pan over medium-high heat. Add the sliced onion and green pepper and cook, stirring occasionally, until softened and beginning to brown, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant. Transfer vegetables to a plate and keep warm.

  3. 5

    Cook Steak

Add the remaining 1 tablespoon oil to the same skillet and increase heat to high. Add the thin steak slices in a single layer (work in batches if needed to avoid steaming). Let the meat sear without moving for 30–40 seconds, then stir and continue to cook until browned but still tender, about 1–2 minutes total per batch. Add 1 tablespoon Worcestershire sauce and stir to combine. Return the cooked onions and peppers to the pan, toss briefly to heat and combine. Taste and adjust seasoning if needed.

Assemble & Cheese

  1. 6

    Combine on Fries

Arrange the warm fries on a large serving platter or on individual plates. Spoon the hot steak, onion, and pepper mixture evenly over the fries.

  2. 7

    Add Cheese

Tear or lay cheese slices over the hot steak and fries so the heat melts the cheese. If you want a more uniform melted layer, place the platter under a very hot broiler for 1–2 minutes until cheese is bubbling (watch closely). For extra creaminess, dollop small spoonfuls of cream cheese across the top before broiling or stirring it into the steak mixture just before assembling.

  3. 8

Garnish with optional pickled jalapeños and chopped parsley.

Optional Sauce

  1. 9

Mix mayonnaise, ketchup, hot sauce, and garlic powder in a small bowl. Taste and adjust heat or seasoning. Serve on the side or drizzle over the assembled cheesesteak fries.
