Mahi Preparation

Prepare the Mojito Rub

In a bowl, mix together the mint leaves, lime juice, minced garlic, olive oil, salt, and black pepper to create the mojito rub.

Rub the Mahi

Coat the mahi mahi fillets evenly with the mojito rub and let them marinate for at least 30 minutes in the refrigerator.

Chipotle Lime Butter

Make the Chipotle Lime Butter

In a bowl, mix the softened butter, minced chipotle, lime juice, garlic powder, and chopped cilantro until well combined. Set aside.

Pineapple Salsa

Prepare the Pineapple Salsa

In a bowl, combine diced pineapple, red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well and set aside.

Mashed Potatoes

Cook the Potatoes

Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Add milk, butter, salt, and black pepper to the potatoes. Mash until smooth and creamy.

Seasonal Vegetables

Toss the assorted seasonal vegetables with olive oil, salt, and black pepper. Grill or sauté until tender.

Grilling the Mahi

Preheat the grill to medium-high heat. Grill the marinated mahi mahi fillets for about 4-5 minutes per side, or until cooked through.
