Prep rice and shrimp
If you haven't already, cook 1.5 cups dry long-grain white rice according to package instructions, then spread on a baking sheet and chill until cold (preferably overnight). Pat shrimp dry with paper towels and season lightly with 1/8 tsp salt and a pinch of pepper.
Scramble eggs
Heat a large wok or 12-inch skillet over medium-high heat. Add 1 tablespoon neutral oil. When shimmering, add the eggs (lightly beaten) and scramble quickly until just set but still moist, 30–45 seconds. Transfer scrambled eggs to a plate and set aside.
Cook shrimp
Increase heat to high. Add 1 tablespoon neutral oil to the wok. Add the seasoned shrimp in a single layer and cook 1–2 minutes per side until pink and opaque. Remove shrimp to the plate with eggs and keep warm. If shrimp are small, reduce cooking time accordingly to avoid overcooking.
Sauté aromatics and vegetables
Add remaining 1 tablespoon neutral oil to the wok. Add diced onion and carrot and stir-fry 2–3 minutes until onion is translucent and carrot begins to soften. Add minced garlic and the white parts of the scallions; stir 20–30 seconds until fragrant. Add the thawed peas and stir to combine.
Combine rice and sauces
Raise heat to high. Break up any clumps of chilled rice with your hands or a spatula and add rice to the wok. Toss constantly to coat and separate grains. Drizzle soy sauce and oyster sauce evenly over rice, and add sesame oil. Continue stir-frying 2–4 minutes so the rice gets heated through and slightly toasted. Taste and add remaining 1/2 tsp salt and 1/4 tsp black pepper as needed.
Serve
Transfer fried rice to a serving bowl or plates. Sprinkle with toasted sesame seeds if using and serve with lime wedges on the side for squeezing. Adjust soy or salt at the table if desired.
