Prepare rice

Use 4 cups of cooked long-grain white rice that has been cooled and chilled (preferably cooked the day before). Break up any clumps with your hands or a fork so the grains are separated.

Prep ingredients

Dice the onion and carrot, mince the garlic, slice the scallions separating whites from greens, thaw the peas, and have cooked protein ready if using. Measure the sauces and seasonings so everything is within reach (mise en place).

Heat wok or large skillet

Place a wok or large heavy skillet over high heat until very hot (but not smoking). Add 2 tbs neutral oil and swirl to coat the surface.

Cook eggs

Add the 2 beaten eggs to the hot oiled wok, quickly scramble until just set but still soft (about 20–30 seconds). Transfer the scrambled eggs to a plate and set aside.

Sauté aromatics and vegetables

Return the wok to high heat, add the remaining 1 tbs oil and 1 tbs butter. When butter stops foaming, add the diced onion and carrot. Stir-fry 2–3 minutes until onion is translucent and carrot begins to soften. Add the minced garlic and the scallion whites and stir 30–45 seconds until fragrant.

Add rice and combine

Add the chilled rice, breaking up any remaining clumps. Spread rice out and let it sit undisturbed 30 seconds to allow some grains to crisp, then stir-fry, flipping and tossing to incorporate aromatics and oil, about 2–3 minutes.

Add peas, protein, and sauces

Add the thawed peas and the cooked protein (if using) and toss to combine. Pour in 3 tbs soy sauce and 1 tbs oyster sauce evenly over the rice. Continue stir-frying 1–2 minutes so the sauces coat the rice evenly.

Season and finish

Return the scrambled eggs to the wok and break them into bite-sized pieces as you fold them through the rice. Add 1 tsp sesame oil, 0.5 tsp white pepper, 0.5 tsp kosher salt, and 0.5 tsp sugar. Toss thoroughly and taste; adjust with a splash more soy sauce or a pinch of salt if needed.

Garnish and serve

Turn off the heat and fold in the scallion greens. Transfer the fried rice to a serving bowl or plates. Serve hot with lime wedges on the side if desired.
