Method
Crab filling
Prepare the crab: finely chop imitation crab or flake lump crab into small pieces so filling is uniform.
Combine filling ingredients: in a medium bowl, mix chopped crab, softened cream cheese, sliced green onion, soy sauce, sesame oil, grated ginger, minced garlic, pinch of salt, and pinch of white pepper until evenly combined. Taste and adjust seasoning (a little more soy for saltiness or more sesame oil for nuttiness).
Chill briefly: refrigerate the filling for 10 minutes to make it firmer and easier to handle (optional but helpful).
Assembling wontons
Prepare wrappers: place one wonton wrapper on a clean, dry surface. Keep remaining wrappers covered with a damp towel to prevent drying.
Portion filling: place about 1 level tablespoon (roughly 15 g) of crab filling in the center of the wrapper. For 6 wrappers use all the filling as portions.
Seal: brush the wrapper edges lightly with beaten egg or water. Fold the wrapper into a triangle by bringing one corner to the opposite corner and press gently to remove air. Optionally, bring the two outer corners together and overlap to form a customary wonton shape, sealing with a dab of egg/water so it holds.
Repeat: continue assembling remaining wontons and place them on a parchment-lined tray until all 6 are shaped.
Cooking (shallow pan-fry or deep-fry)
Shallow pan-fry (crispy-bottom, tender top)
Heat 1 tablespoon vegetable oil in a nonstick skillet over medium heat. Place wontons in a single layer, cook until bottoms are golden brown, about 2–3 minutes. Add 2–3 tablespoons water to the pan and cover immediately. Steam for 2–3 minutes until wrappers are tender and filling is hot. Remove cover and cook uncovered 30 seconds to crisp the bottoms again. Transfer to a plate lined with paper towel.
Deep-fry (fully crispy)
Heat about 1 cup of cooking oil in a small saucepan to 350°F (175°C). Fry wontons in batches (do not overcrowd) for 1.5–2.5 minutes, turning once, until golden brown and crisp. Use a slotted spoon to transfer to paper towels to drain.
Choose cooking method: either method works — shallow-pan yields crispy bottoms and steamed tops; deep-fry yields uniformly crisp wontons. Ensure internal temperature is hot and filling is fully warmed.
Finishing & serving
Garnish: sprinkle optional sesame seeds and chopped green onion over wontons for color and texture.
Serve: arrange 6 crab wontons on a plate and serve immediately with sweet chili sauce or soy-vinegar dipping sauce on the side.
Storage: leftover cooked wontons can be refrigerated in an airtight container for up to 2 days and reheated in a 350°F (175°C) oven for 6–8 minutes to re-crisp, or in an air fryer for 3–4 minutes.
